Hotel restaurants & bars can be terribly under utilised! At DoubleTree by Hilton - Leeds, this was the case. Starting with a very steryle bar, remote from the breakfast restaurant due to a disused reception area, I created a fun deli bar & restaurant that not only retained hotel guests, but also invited in people from the restaurant hub of Granary Wharf. It is now used all day long. Taking inspiration from the nearby canal, I developed a narrative of a bar operated by the old lock keeper using the services of the local canal boat builders.
Nominated as a finalist in the Casual Dining Awards "Best bar of 2018", The Store Street Carft Bar was created to improve the synergy between the hotels reception and bar. To not only be a great place for travellers to relax, but aslo as a destination bar in the business hub area of Manchester
My brief was to create a multi use area on the 13th floor of the hotel, that could be used for meetings & events during the day & as a bar at night. The Sky Lounge soon became THE place to be seen in Leeds. Taking my inspiration from 1960's Alpine ski lodges & James Bond, using rich timbers, metaillic finishes & reindeer hides. Surface reflect the fantasting skyline & its fasionable clientele.
The Charterhouse, a charitable almshouse in central London, opened its doors to the public in 2017 with a new visitors centre, telling the story of their 14th C complex. As part of this I had the challenging brief of converting the ground floor of a 17th C town house into a cafe
